Waldorf Brown Rice Salad

1 cup brown rice
3 courtland, golden, or delicious apples
2 tablespoons lemon juice
1/2 cup chopped celery
1/4 cup chopped walnuts
1/2 cup mayo
1/2 cup nonfat vanilla yogurt
Directions
Prepare rice according to package. Cool.
Wash, core, and slice apples coarsely, without peeling. Sprinkle apples with lemon juice and toss. Add cooked rice, chopped celery, and nuts. Blend well. Fold mayo into yogurt. Add to rice-fruit mixture.
