4 medium ripe tomatoes
Salt to taste
8 (1/4 inch thick) slices fresh low-fat mozzarella
8 basil leaves, washed and dried
fresh ground pepper to taste
Extra virgin olive oil for drizzling
Directions
1. Core and cut the tomatoes into ΒΌ inch slices. Lightly salt, if desired.
2. Layer tomatoes, cheese, and basil on a platter and sprinkle with salt and pepper; drizzle with olive oil, and serve.
