Spicy Beef and Brown Rice

1 cup brown rice
1 pound extra lean ground beef
1 medium onion, chopped
1 medium jalapeno pepper, minced
1/8 teaspoon crushed garlic
Salt and pepper to taste
1 tomato, chopped
Directions
Prepare rice according to package and set aside. In a medium skillet, brown beef with onion, jalapeno, pepper, and garlic (about 10 minutes or until meat is no longer pink). Add salt and pepper to taste. Fold in chopped tomato.
Serve on a bed of hot rice.
