1 small sweet potato, peeled and cut into long 1/2-by-1/4-inch-thick fries
1 teaspoon olive oil
1 teaspoon mild curry powder
3/4 teaspoon salt
1/4 teaspoon finely grated lime zest
one lime wedge
Preheat the oven to 425 F. Combine all ingredients in a large zip-top bag, except lime wedge. Shake until fries are well coated.
Spread in a single layer on a foil-lined baking sheet; bake until fries are golden brown, about 20 minutes. Serve with a lime wedge to squeeze over fries if desired.
