Southwestern Shrimp Baguette

1 cup plain yogurt
2 tablespoons mayo
2 tablespoons chipolte sauce
1 tablespoon lime juice
1/4 cup chopped cilantro
Salt to taste
3/4 cup diced red pepper
12 ounces peeled and deveined cooked shrimp
4 whole-wheat baguettes, hollowed out
Directions
Stir first 6 ingredients in a small bowl until well blended, then add the red pepper and shrimp. Toss until all ingredients are coated with the yogurt mixture. Serve on the baguette.
