Pasta with Smoked Salmon and Fresh Dill

1 pound whole-wheat pasta bow ties or other like pasta
2 cloves garlic
1 red bell pepper, julienned
2 tablespoons dijon mustard
1/4 cup red wine vinegar
1/4 cup fresh lemon juice
6 tablespoons olive oil
1 pound smoked salmon, cut in strips
1/3 cup chopped fresh parsley
1/3 cup chopped fresh dill
Coarsley ground black pepper
Recipe Directions
Bring a large pot of water to a boil. Add pasta and cook until tender. Drain immediately. Transfer pasta to a large mixing bowl.
While the pasta is cooking, make the dressing. Place garlic and half of 1 red pepper in blender or in a food processor fitted with a steel blade; pulse until chunky.
Add mustard, vinegar, and lemon juice, and process until combine. Gradually add olive oil.
Pour dressing over pasta. Add salmon, peppers, parsley, and dill. Mix together.
Add pepper to taste. Top with parmesan if desire.
Serves 6-8
