Oven Roasted Sweet Potatoes and Onions

4 medium size sweet potatoes
2 medium size sweet onions
1 TB extra-virgin olive oil
1/2 teaspoon garlic pepper
1/4 teaspoon salt
olive oil cooking spray
Directions
Peel sweet potatoes, and cut into 20-inch pieces. Cut onions into 1-inch pieces.
Toss together sweet potato, onion, oil, and seasonings in a 15 by 10 inch jelly roll pan coated w/ cooking spray.
Bake at 425 F for 35 min or until tender, stirring occasionally
