Mesclun Salad

4 cups mesclun salad mix
2 tsp. finely chopped shallots
1 1/2 Tbsp. rice vinegar
Black pepper to taste
Directions
Wash the mesclun salad, pat dry and place in bowl. Add the shallots and toss with the rice vinegar. Transfer to plates and add pepper to taste.
Serves 4
