Herb Vinaigrette

1/4 cup tarragon, basil, or assorted herb vinegar
2 TB minced shallots
1 TB minced garlic
1/4 cup chopped fresh herbs (combine basil, tarragon, cilantro, parsley, oregano, etc?)
1 teaspoon salt
15 turns freshly ground black pepper
3/4 cup extra-virgin olive oil

Directions
1. Combine vinegar, shallots, garlic, herbs, salt, pepper in a bowl.
2. Slowly whisk in the oil and continue whisking until thoroughly emulsified. Can be refrigerated for up to 3 days.
