Garlic Broccoli

Dressing
1 tsp olive oil
2 cloves garlic - minced
2 Tbsp apple juice
1 Tbsp red wine vinegar
1 tsp dried parsley
1 ˝ tsp paprika

4 cup broccoli florets
1/4 cup water
salt and black pepper to taste

Directions
1. Heat the oil in a small saucepan and sauté the minced garlic. When lightly browned, stir in the apple juice, red wine vinegar, parsley, and paprika. Heat through.
2. Place the broccoli in a microwave safe dish with water. Cook on high for about 5 minutes, until bright green and slightly tender. Pour the warm dressing over the broccoli and toss to coat.
3. Season to taste with salt and black pepper.
