Garden-Style Pasta

12 ounces of whole-wheat penne or other like-pasta
12 ounces fresh spinach, rinsed, stems removed, and torn into bite-size pieces
1 cup cherry tomatoes, halved
1/2 medium red onion, thinly sliced (about 1/2 cup)
1/2 cup Italian dressing (under 3 grams of sugar per serving)
2 ounces of feta cheese, cubed
1/4 cup whole pitted black olives
1/8 teaspoon black pepper

Directions
Cook pasta according to package. Drain in colander. In a large bowl, combine warm pasta, spinach, tomatoes, and onion. Drizzle dressing over pasta mixture and toss to coat.

Arrange pasta mixture in bowls. Sprinkle with feta cheese, olives, and black pepper. Serve immediately.

Serves 4
