Black Bean Salsa Soup

2 cans black beans, rinsed
2 cans of chicken broth
1-1 1/2 cups chunky salsa
1 can of green chilies

Directions
In blender or food processor place 1 can of black beans, chicken broth, and salsa. Blend until smooth…place mixture into saucepan with the rest of the beans and chilies. Mixture will develop into a wonderful creamy soup. Makes about 6 servings

Top with a dollop of sour cream and green onion if permitted.

I modified the recipe a little bit. I started by sautéing chopped onion and diced chicken cubes. I then added the soup ingredients but didn’t do the puree leaving the beans, chicken, onions and salsa ingredients whole. The final result was a raving success according to my husband. It was definitely a hearty winter comfort food. We are so happy to find such a satisfying phase 1 recipe.

This whole time I thought black beans was considered a starch and was not allowed in phase 1…awesome! I will definitely try this recipe..
