Baked Shrimp

8 ea jumbo shrimp, cleaned
4 Tbsp. lemon juice
1/2 c Smart Balance or other acceptable margarine
1/2 c chopped parsley
3 cloves garlic (minced)
1 c whole wheat bread crumbs
2 tsp paprika
Recipe Directions
Butterfly shrimp but don’t cut all the way. Spread and flatten. Place shrimps in individual baking dishes. Sprinkle with portion of lemon juice.
Combine margarine, 5 tablespoons of the parsley and garlic in a bowl. Place some of the mixture on each shrimp. Combine crumbs, remaining parsley and paprika and sprinkle over each shrimp.
Bake at 400 degrees for 15 minutes or until done.
