4 bunches arugula, torn
1/2 cup crumbled blue cheese
1 ripe mango, peeled and diced
Salt and Pepper
1/2 cup dry-roasted sunflower seeds
Dressing:
1 lime, zest finely grated and lime then juiced
3 tablespoons rice wine vinegar
4-5 tablespoons olive oil
Directions
Combine the arugula, blue cheese, and diced mango in bowl. Add salt and pepper to taste. Toss.
Whisk together dressing ingredients. Dress and garnish servings with generous handful of sunflower seeds.
